As Christians the basis of our walk with God is the death and resurrection of our Lord Jesus Christ. It's amazing the great number of things the death of Christ settled for us, it is indeed a great privilege to be a member of the body of Christ, a child of God and Co-heir with Christ.
Christ did so many things through his death and he wanted us to constantly have his finished work in our heart, hence he admonished us to constantly eat his flesh and drink his blood by eating the physical communion. This he advised so we can always remember what his death and resurrection accomplished for us.
As you eat and drink the communion, you are saying "Jesus I am eating your flesh and drinking your blood to remind you, myself and the enemy that you died so I can be free from all you died for and I can access all that your death released for me".
It may look foolish but it is important you know that according to 1Cor 2:14 paraphrased "The things of God are foolishness to the unbelieving man". I believe God's word is true hence if he says I should eat and drink of the cup to act as a reminder of his finished work so be it".
As a rainbow serves as a covenant and reminder to God and man so does taking the bread and wine serve as a covenant of the finished work of Jesus to both God and man.
